How to Shuck & Serve Oysters at Home

Storage & Temperature

Keep oysters in the fridge at around 5°C. Store them in a breathable container (no airtight lids) covered with a damp cloth. Never store oysters in fresh water — it will kill them.

Cleaning

Before shucking, rinse oysters under cold running water and give the shells a light scrub. This keeps them clean and ready to open.

Shucking

Wear safety gloves and use a real shucker (butter knives are asking for trouble!). Find the line between the top and bottom shell, insert the blade at 2 o'clock, and sever the adductor muscle. Slide and twist—you're done!

Serving

Serve freshly shucked oysters on a bed of ice, with lemon wedges and your favourite condiments. Keep them chilled until the moment they’re enjoyed.

How Long Do They Last?

You’ll receive a harvest date with your oysters. For peak flavour, enjoy them within 3 days, and always consume within 8 days of harvest.

Spoilage

If in doubt—throw it out!
